Moduline, thanks to a commitment of more than 15 years in research and technology now offers a complete range of ventilated ovens for regeneration. Moduline regeneration ovens combine the controls and monitoring typically found only in combi ovens, and combine them with the cooking features of a steamer. Then, after we did all that, we did the impossible, what steamers can’t do, designed it so you can CONTROL your food, not just time your food. Moduline regeneration ovens are calibrated, starting from the ventilation, which must guarantee uniformed temperatures within the chamber and regenerates the food by the time stated by the standards in force, avoiding damaging or drying out the food. These are products that have already been processed (cooked) and – especially the more delicate, such as vegetables or fish, – it is only possible to regenerate them in a regeneration oven, therefore not risking cooking them again. In addition, the humidity must be measured perfectly, because low humidity dries out the final product and too much humidity makes the dish watery, rendering the food inedible and unpresentable. The Moduline regeneration ovens guarantee regeneration with a good quality final product and a cavity temperature measured perfectly for the type of product you wish to regenerate.All without the need for a ventilation hood or water connection.

Batch Cooking:

Batch cooking is filling the steam cavity with product and allowing the steam to complete the cooking cycle. This is primarily done with schools and hospitals who are not cooking to order but are serving in bulk. This may also apply to restaurants who have specials and a vast amount of product is served in a short time.

Regeneration:

Regeneration is the process of bringing refrigerated or frozen, precooked product back to serving temperature, while maintaining that freshly cooked taste and appearance. This is where Moduline shines above all others.
